Mmmeals: mouth-watering peanut butter cookies

Sometimes, when I get restless… I make cookies.  Lucky me, there’s an abundance of veg-friendly recipes online.  I got this recipe by googling “vegan peanut butter cookies.”  Click here to see the original post!

This Mmmeal makes about 30 cookies.


  • 2 cups flour (800 cal)
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 3/4 cup chunky peanut butter (750 cal)
  • 1 cup maple syrup (800)
  • 1/3 cup extra virgin olive oil (640 cal)
  • 1 1/2 tsp vanilla extract

Cooking Utensils You Will Need:

  • baking sheet(s)
  • measuring spoons and cups
  • 1 mixing spoon
  • 2 mixing bowls
  • 1 oven


  1. Preheat oven to 350F degrees.
  2. In one mixing bowl, combine flour, baking soda, and salt.  Stir until combined.
  3. In the other mixing bowl, combine peanut butter, maple syrup, olive oil, and vanilla.  Stir until combined.
  4. Pour the flour mixture over the peanut butter mixture, combining slowly until mixed.
  5. Place spoonfuls of the dough onto a greased baking sheet.  Press each lump down with a fork.
  6. Bake for 10-12 minutes, or until the corners begin to brown.


Recipe notes: Yum!  Definitely not healthy, but it’s a pretty darn good peanut butter cookie recipe if you ask me.  They do have a bit more protein in them than your average cookie, being part peanut butter, so they’re a good hunger quencher at 1 a.m. when you’re only half way done with stuffing wedding invitation envelopes (:

As I leave, I always make a note to myself: self, you love going to the gym. That’s not to say that I don’t fall off the wagon all the time. Like in the photo above, with some *delicious* vegan mac and cheese at the 2011 Vegan Beer Fest. Or like every other day, when I convince myself that it is acceptable to park my butt on the couch and watch three hours of television before bed instead of changing into my gym clothes and fitting in a workout. Without all of my falling off, I wouldn’t be able to boast my tofu belly. But more important than the falling off is the getting back on. With this blog, I’ll share with you my constant struggles with myself to get to the gym, to drink more water, and to make healthy and low-cal food choices. By sharing, I hope to keep myself more accountable while also showing others that it is entirely possible to live a healthy, albeit busy, life one day at a time. Here’s to firming up my tofu belly — with a little help from you!
